We met in 2014 working together as Beverage Director & GM of Blue Hill NYC, under Chef Dan Barber. We've been leading operators on various projects across the country and we specialize in working with clients who are disrupting their categories & aren't afraid of taking risks.      

 

MICHELLE BISCIEGLIA

Since making the decision to end a career path in medicine in 2008, Michelle fell into the world of wine while working at Pastis in NYC.  She quickly decided to learn from the ground up and worked two harvests in Burgundy in 2009 and 2010, as well as a summer in the vineyards of Piedmont.  After returning to NYC, she worked at Restaurant Daniel, Boulud Sud, WD-50, Casa Mono and most recently Blue Hill.  In 2013, she joined the Blue Hill team as wine director and later took over the entire beverage program as well as the GM role.  She was a key player in the wastED pop up at Blue Hill, including serving a wastED meal to 40 heads of state at the UN. She has worked events and special projects for Dan Barber, Rene Redzepi, MAD, Massimo Bottura, Michel Troisgros and Edible Schoolyard.  She left Blue Hill in December of 2017 to join forces with Xandre and create RADUNO.

XANDRE BORGHETTI

Xandre was born into a family of successful LA restaurateurs. He grew up working in the family restaurant business, and launched Trattoria Farfalla in Westlake Village at the age of 21. In 2009 he moved to San Francisco and became part of the NOPA team as a manager, overseeing general operations and helping start their acclaimed brunch program. In 2013 he joined a startup venture, Social Print Studio, as Chief Operating Officer. During his tenure he built the in-house production team and revenues and staff quintupled. After a few years Xandre moved to New York where he became GM of Blue Hill in NYC. He was part of the wastED popup, helped create a new bar menu and was instrumental in executing the Test Kitchen Experience - a curated evening designed by Blue Hill.  He spent the last half of 2017 consulting on restaurants and special projects from LA, to Marfa, TX to NYC.
